What temperature should the flat iron be on??

This is very easy on VIRGIN hair. I have bleach blonde damaged hair and once the pass gets down to my ends it starts gripping and jerking like it doesn't want to continue passing and it sucks.

It's gotta be my flat iron! Seriously! I'm doing this exactly as he's demonstrating and NOPE! At least I know now my flat iron is shotty!

Idk what I'm doing wrong but no matter what I try I can't get my hair to hold the curl. I know it's possible, stylists have curled my hair before, but even still I just can't do it. Everyone makes it look so easy
